Recovery and Kodak

Sorry its been hard to try getting on with this broncitus thats going around with everyone right now.

On a sad state of news, Kodak (the original camera sponsor of Disney) is going bankrupt and will stop production on all digital cameras, video cameras, and digital picture frames after the first quarter of 2012. Just to have a little look back, here are there old Disneyland ads:

There have been two points brought up that I have to put into consideration. One has to do with only doing sandwiches located in Disneyland, DCA, and their hotels but not Downtown Disney (especially if its a chain like Rainforest Café). The second is only reviewing one sandwich per venue. For instance not reviewing both Monte Cristo's at Café Orleans (technically I could eat the traditional at Blue Bayou, but I do not think that won't be happening this trip), or a better example is the Chicken Waldorf vs. Caprese Sandwich. If I agreed to both of these concepts as both the best sandwiches in the parks/hotels and only one per venue the list will end up looking like:

WK 4 - DP - Nut Crusted Salmon Take 2

No photos on this post. I made the Nut Crusted Salmon again this time using a little more oil and pressing the nut mixture on a little more in steps and the crust turned out much better. I will be attempting this recipe again (with pics next time) soon but with little cayenne and cumin so it is not competing with the Salmon as much and the flavors better compliment each other.

WK 4 - DP - Thuthuntshwane Soup




As my girlfriend and I have been under the weather I again post pone my salmon dish, this time for a delicious soup. This recipe is a vegan mushroom soup from Boma. 




I admit that I am not the hugest fan of mushrooms but this soup was delicious and hit the spot perfectly. 

Thuthuntshwane Soup
---------------------------------------------------------------------------------------------

2 tablespoons Cornstarch
1 ounce Olive Oil
4 ounces Diced Onions
1 pound Button Mushrooms
1 tablespoon Dried Porcini Mushroom Powder
1/2 gallon Water
3/4 ounce Vegetable Base
To Taste Salt
1/2 ounce Fresh Garlic
3/4 ounce Fresh Basil

---------------------------------------------------------------------------------------------
Sauté diced onions with olive oil until translucent. Add button mushrooms, dry porcini mushroom powder, water, vegetable base, fresh garlic, and seasoning.

Cook for 20 minutes. Remove stems from basil. Add basil leaves at the end. Then puree with an immersion blender.

Bring back to a boil. Combine the cornstarch with 2 tablespoons of cold water. Stir and add to the boiling soup while whisking continuously

Adjust seasoning if needed.

Yields 1/2 gallon

WK 4 - DP - Fritos and Fries

I am a little under the weather so am unable to cook another attempt at Quinoa and Nut Crusted Salmon so as I was reminiscing about those feel good foods, and I remembered the old Conestoga McDonalds wagon in Frontierland at Disneyland. As well as my one and only time eating at Burger Invasion for my high school grad night back in 2003 at Disney's California Adventure.


Then after I get the food which tastes better as a memory then in real life, I remember why I am trying to cook at home more.

That being said one of the next segments I want to really do recipes on is Casa de Fritos / Rancho del Zocalo and their incarnations in between.



WK 4 - DP - Quinoa Salad


I have to say I have been really enjoying posting the Disney creations here on the blog but realize the photos are a bit lack luster. As the blog continues on I hope to post more and better quality photos with each recipe. I hope you enjoy my take on the Quinoa Salad from Boma at the Animal Kingdom Lodge as much as I have. 


 
 
 
 

In the end the Quinoa Salad dressing was an all star but the rest of the dish was rather lackluster. I do not think it was the ingredients but my lack of knowledge properly blooming quinoa, or it may have been my selection of Royal Red Quinoa versus a more traditional variety. Either way I will be trying to repeat this recipe this week. Also note that 1/16 cup is the same as 1 tablespoon and 1/8 is 2 tablespoons.

Quinoa Salad
---------------------------------------------------------------------------------------------

Quinoa & Related Prep
1/8 cup Quinoa
1/16 cup Rice Vinegar
1/16 cup Lemon Juice
1/16 cup Water
1/16 cup Sugar

Dressing
1/16 cup of Dijon Mustard
1/16 cup Rice Vinegar
1/16 cup Honey
1/16 cup Safflower Oil


Salad
1/4 Pear, julienned
1/18 pound Spinach, washed and cleaned

Place quinoa in the bowl and add water. Let soak for 30 seconds, drain, and set aside.

Make tart stock (vinegar, water, sugar, and lemon juice). Add quinoa. Cook/simmer until quinoa blooms. Drain the quinoa and place on a sheet pan. Let cool in the refrigerator.

To Make the mustard dressing, combine mustard, honey, and rice vinegar. Whip together and add the oil in slowly. Adjust seasoning with salt and pepper.

Cut the pear into julienne strips. Wash spinach. Mix all the ingredients together - spinach, quinoa, pear, and dressing. Serve.

WK 4 - DP - Nut Crusted Salmon

I have to say that the Salmon came out perfectly cooked. My only mistake was either my Cayenne Pepper or Cumin, or combination of was a little to strong.


Yield: 10 servings (1 5/8 cups)
Ingredients:
½ cup Cashews, toasted and ground
½ cup Pistachio Nuts, toasted and ground
5/8 cup Pumpkin Seeds, toasted and ground
1/8 cup Honey-roasted Peanuts, ground
1/16 cup Cumin, toasted
1/16 cup Coriander, toasted
1/16 cup Curry Powder, toasted
1/8 cup Sugar
1/16 cup Cayenne Pepper
Method:
Mix all ingredients in a large bowl.
Coat the salmon (or fish of your choice) with olive oil. Then coat with the nut crust. Bake in 350º F oven for 20 minutes.
Previously frozen Wild Sockeye Salmon on sale for $6.99 Lb at Whole Foods.
I used my new Food Processor at my first attempt at grinding the nuts.
Nut crusted salmon fresh out of the oven.

Salmon on a bed of some left over Indian Basmati Rice from the Geerly's Rice recipe last week.

The cashews that I used are Whole Food 365 Brand and are USDA Organic.

Continued with M&B Curry and since I could not find Cumin by them I got Whole Pantry instead.

WK 3 - DP - Animal Kingdom Saturday Preview

Tomorrow I will be cooking two new dishes from the Animal Kingdom. For the main course we have Nut Crusted Salmon from Boma.

Yield: 10 servings (1 5/8 cups)
Ingredients:
½ cup Cashews, toasted and ground
½ cup Pistachio Nuts, toasted and ground
5/8 cup Pumpkin Seeds, toasted and ground

WK 3 - HM - The Haunted Mansion Volume One: Welcome, Foolish Mortals

On November 15, 2007 SLG published a collection of their Haunted Mansion Inspired Comics into a hardbound book titled The Haunted Mansion, Volume 1: Welcome, Foolish Mortals. This contained comics 1-6 of what was going to be an 8 comic series, After the hardcover was release SLG did release comic #7 but as far as I know #8 never was published. The stories give great background stories to many of the ghostly residents and is a great read. Stories range from comical to horrific.

WK 3 - IN - Digital Picture Frames

I have always thought it would be great to have digital picture frames since I walked through the Disney Dream Home at Innoventions. What I hadn't realized and that many of the small HP Digital Picture frames were specially created for the house, and the very large ones were HP monitors built into the wall and frames put over them to give the illusion of a very large picture frame.

My biggest complaint when looking around at Digital Picture Frames was that nearly all of them has the frame built into the technology, meaning you couldn't change it. Then after a long search I found the Kodak Easyshare D825.

It allows you to use over the counter frames. I only have one so far but it was a great purchase. It is easy to operate and the colors look great and its Energy Star qualified. That a big thing because as I purchase more technology I want to try reducing the amount of energy the devices I get require. I have also started getting the Energy Star Flood Light Bulbs for my living room. Thats a great trade off. I use the same amount of electricity with nearly four of the Energy Start Flood Light Bulbs as I would have with just one of the old ones.

WK 3 - IN - Media Server

Every-time I go to Disneyland I walk through the aging Disney Dream Home for possible ideas to help make my girlfriend and I's life easier but making our home are Smart House. The first thing I needed to try was replicating a Media Server that stores all of my photos, movies, etc..... In the Smart House they use an HP Mediasmart Server EX495, for my build I decided to use a Mid 2010 Apple Mac-Mini Server.

The specs on HP Mediasmart Server EX495 were:
2.5 GHz Processor with 2GB RAM and a 1.5 TB Hard drive

The specs of my Mac Mini Server are:
2.66 GHz Intel Core 2 Duo processor with 4GB RAM and a 1 TB Hard drive

After I got my server setup I needed a way that I could stream my content to anywhere in the house and to any of my iOS devices. At our house we have two iPhone 4's, an iPod 1, and a Second Generation Apple TV in the bedroom. After doing a lot of research it seemed the best option was Plex. Plex takes all of my content and I can stream it from any of my devices anywhere over Wi-Fi or our Unlimited Data Plans on our phones.

Since my server is running 24/7 I also have it plugged into an APC Power-Saving Black UPS Pro 1300

This way if the power ever goes out my server will stay running and I can either turn it off manually or remotely from one of my iOS devices using Splashtop:

The next thing I wanted to get rid of was the gigantic ugly Comcast box. I purchased the Elegato EyeTV Hybrid HD which allows me to take the Comcast digital cable connection into a device the size of a flash/thumb drive into the back of the Mac Mini Server. This allows us to watch TV through the server and DVR whatever we want which then in turn is read with Plex allowing us to stream it from anywhere.

The final part of my current Media Server Setup is my router. The Comcast router hooks into my AirPort Extreme which is duel band so all my devices go as fast as they can without slowing any part of my network down. You can see more information on that: http://www.apple.com/airportextreme/

The only other piece of technology I have plugged into the setup right now is my original white Wii Gaming Console and I use an Apple SuperDrive when I need to put in a CD or DVD to my Server. The server is plugged into our 42" TV which is also plugged into the APC. I use the Apple Bluetooth Keyboard and Magic Trackpad to control the Server.

So thats a rough idea of how I am starting the media center in our home.


WK 3 - HM - Welcome to the After-LIFE

My girlfriend recently picked up the Haunted Mansion edition of The Game of Life for Christmas for me and Disney and Hasbro did a great job on this.


The games premise is based on you reaching your final destination and joining the other 999 Happy Haunts with the most screams generated along the way. In the beginning you choose to either attend the BOO-niversity or start a Scareer which effects which one of the Happy Haunts in the mansion you become. Did I mention the buildings in the game are glow in the dark plastic replicas of the Disney Haunted Mansions around the world. Even your ghosts (instead of people) that you place in Doombuggies instead of cars glow in the dark.
